TASTING APPETIZER PLATE: Flan of Cardo Gobbo di Nizza Monferrato, drops of bagna cauda and a crisp Parmesan tuile with Carmagnola peppera
Contemporary Genoese Cima, served with green-sauce foam and pine nut mayonnaise
Liguria-style stuffed squid medallion on saffron potato purée with parsley oil gel
FIRST COURSES: San Massimo Reserve Carnaroli risotto with artichokes in two textures, finished with “Blu del Lavagè”, a Ligurian blue cheese from Rossiglione
